
CAKE
4 eggs
2 cups plain flour
2 cups castor sugar
3/4 cup vegetable oil
1 tsp bi carb soda
1 tsp vanilla essence
1 tsp cinnamon
1 tsp salt
2 cups grated carrot
1 1/2 cups chopped walnuts
ICING
300ml thickened cream
4 tbs icing sugar
1 lemon juiced
METHOD
CAKE
Pre heat oven to 160 degrees (fan forced)
Mix all ingredients (except carrot & walnuts) in a large bowl.
Stir in carrot & walnuts
Grease 25cm cake tin & pour mixture in
Bake for 40-45 minutes
ICING
Mix all ingredients in a bowl with a hand mixer
Once cake is cooled, ice & serve
